Baby Kidney + Chicken (No Noodle) Soup

Right now, comfort food is more necessary than ever, and chicken soup is the ultimate! This recipe is inspired by Marry’s mom, Stephanie. She makes the best soup – it even cures hangovers! This super easy soup is low carb since there isn’t any noodles. However, you can boil noodles and combine with the soup if you’d like. It makes quite a bit so yummy lunch leftovers are perfect. Ingredients :

1 rotisserie chicken
1/2 onion
4 chopped carrots
4 chopped celery stalks
1 1/2 qt vegetable broth
1/4tsp salt
1/4tsp pepper
1/2tsp paprika
1/2tsp onion powder
1/4tsp garlic powder

Instructions :

Remove all edible pieces from chicken, chop and set aside
Place carcass and all non-edible chicken pieces into a large pot
Add vegetable broth and 1/2 onion to pot
Bring to a boil, then cover and reduce heat
Simmer for 1 hour
Place colander over a bowl and pour pot contents in (to remove carcass and other pieces)
Place broth, chopped chicken, carrots, celery and spices into pot
Simmer for 1 hour
